Geese are in several locations of RDR2, most often around bodies of water. Exotic Bird Meat Rarer birds, such as the parakeet, parrot, and pelican, result in Exotic Bird meat. Parrots are exclusive to Guarma, and parakeets are located almost entirely in Bayou Nwa.

Best way is like Mojo said to start collecting those exotics earlier in chapter 2 as soon as you can free roam cause sometimes spawns have been bugged so some exotics are veeery hard to get to spawn when you start the quest.
